Method to cook delicious Green Banana Kofta curry!
Cut the end portion of the raw bananas. Now cut each raw banana into two pieces but do not peel the skin. Boil 4 cups of water in a deep pan and add green bananas in it with a pinch of salt and turmeric powder. Let it boil for 20-30 minutes. To check whether they are boiled or not insert a knife into the boiled banana- if it goes through smoothly then its cooked till soft. Turn off the flame and drain the water. Once boiled peel off their skin and mash them.
In a bowl add grated or mashed Bananas along with grated paneer, chopped onions, ginger paste, chopped chilies, coriander powder, amchur powder, coriander leaves, chopped garlic, besan and salt. Bind the mixture such that you can make small sized balls of the mixture. Add one resin in mid of each ball. Deep fry them in refined oil till golden brown.
To prepare the gravy, heat 2 tablespoons of mustard oil and add the cumin seeds (Jeera) and bay leaf (Tej Patta) to crackle.
Add the chopped onions and saute till golden brown. Add ginger-garlic paste and saute for a minute. Add turmeric powder, cumin powder, coriander powder, red chili powder, sugar and salt and mix. Add tomato puree and cook for another 5 minutes. Add cashew nut paste and potatoes and cook for 2 minutes.
Pour a cup of warm water over it and let it boil for 5-7 minutes.
Add fried kofta balls in the gravy and coat well with the gravy. Garnish the Banana Kofta Curry with fresh cream and fresh coriander leaves and serve hot with Roti or Paratha!
