Stuffed Capsicum Curry -Andhra Recipes-Telugu Vantalu
Ingredients:
Capsicums - 4 medium sized
For Stuffing:
Carrot cubes -100gm
French bean cubes - 100gm
Potato cubes -100gm
For Cooking:
Oil -30gm
Cumin seeds -2 gm
Ginger-garlic paste -20gm
red chilli powder -3gm
turmeric powder -2gm
salt to taste
For garnishing:
Paneer (cottage cheese) cubes (fried)
Coriander leaves (chopped)
Method:
Heat oil; add cumin seeds; add ginger-garlic paste dissolved
in a little water and the spices. Bring it to the boil and add the
vegetables. Cook till done. Cool it on tabletop. Stuff the vegetables
in the capsicums and cook in the griller. Garnish with chat masala,
fried cubes of paneer, and chopped coriander leaves can also
be added.
